Diego Arguedas, began working at Danube Restaurant.  He was awarded three stars by the New York Times, it was there that he discovered his passion for the restaurant industry.

In 2000 he began working at Bouley Restaurant under the tutelage of one of the best Maitre D’ New York, Didier Palange ¨ There I learned the importance to be in contact with the guests, coordinate teams and welcome customers inside its huge settings of restaurant, lounge and bar.¨

After living in Costa Rica, New York and Miami he was invited by his friends  to make the perfect match.  They have the creativity and innovation in the kitchen while Diego is responsible for the magic of the dining room.  Thats how he moved to Mexico City to be the Maitre D’  Restaurants Polanco.
